Hutsul-style lazy dumplings from the Carpathians: Recipe for the holidays

Carpathian lihantsi are a traditional dish of Ukrainian cuisine, which has ancient roots and remains very popular, especially among the inhabitants of the Carpathians. They are also called Hutsul dumplings.

Lihantsi are similar to lazy dumplings, but they differ in the presence of a filling. These dumplings are tender and juicy.

Ingredients:

●      Potatoes - 1 kg

●      Sour milk cheese - 400 g

●      Semolina - 300 g

●      Egg - 1 pc.

●      Salt to taste

●      Black pepper to taste

●      Greens for filling - optional

Method of cooking:

  1. Boil the potatoes in their skins, peel them, and make a puree out of them.
  2. Mash the sour milk cheese with a fork, season with salt, and add your favorite spices.
  3. Add cottage cheese, semolina, egg, salt, and pepper to mashed potatoes, and mix thoroughly. Form dumplings from the resulting mixture, filling them with cheese filling.
  4. Cook the dumplings in salted water until ready. Serve them with butter, sour cream, or sauce.

In Transcarpathia, it is also popular to add small cracklings and garlic to these dumplings. Liganzi can be prepared with various fillings, such as meat, cabbage, or mushrooms.
