Carp is tender and has a mild taste. With the addition of oregano and lemon, the dish will have a slightly Mediterranean mood, fresh and light taste.
How to choose a fish
You can buy live carp in many supermarkets where they can even clean it for you. Consider several factors when purchasing:
● the belly of fresh carp should not be bloated;
● The gills should have a reddish color;
● fresh carp has a pleasant smell, although it can give off a small river smell.
However, if you buy fresh frozen fish, don't worry; it will taste great too.
Baked carp with lemon and oregano: recipe
Ingredients:
● Small carp ( about 1 kg)
● Lemon
● 10 g of dry oregano
● Celery root ( optional)
● Salt to taste
Instructions:
1. Preheat the oven to 180 degrees. Clean the carp of any scales, gut it, remove the gills and rinse well with water. With a sharp knife, make cuts on both sides of the fish at an angle of 45 degrees, cutting to the bones.
2. Rub the carp inside and out with salt to taste and oregano; you will need about 10g. Insert slices of lemon into the cuts. Put the fish on a baking sheet lined with foil or parchment. If desired, put a few slices of celery root under the fish for more flavor. Bake in an oven heated to 180 degrees for 20 minutes. Serve with a side dish of vegetables or rice.
