Ukrainian restaurant in Warsaw celebrates milestone entry into Michelin Guide

Willa Biała, a Warsaw restaurant launched by Ukrainian founders, has earned recognition from the Michelin Guide.

The elegant venue, housed in a historic 20th-century villa in Mokotów, serves Central and Eastern European cuisines prepared from fresh, local ingredients. Founded by a Ukrainian couple from Lutsk, Serhii and Iryna Slobodanyuk, the establishment employs several Ukrainians, including Chef Rostyslav Tomilin from Berdyansk and Director Vira Shportak from Chernivtsi. This year, the restaurant earned its spot in the prestigious Michelin Guide.

The restaurant's team announced the achievement on social media. In an Instagram post, they wrote: “This is a moment many restaurants dream of. For us, this is, first and foremost, a tremendous honor and confirmation that it's worth trusting your own path – a path we chose consciously and never strayed from, even when it required more patience, courage, and consistency.”

“This award is more than just a reward for us. It’s confirmation that dreams only make sense when you turn them into daily work. Over the past few years, we’ve been building Willa Biała exactly the way we felt it should look – no shortcuts, no compromises, with respect for the product, the people, and the craftsmanship.”

“We see this award as a success for the entire Willa Biała team: the kitchen, the service, the bar, and the management. It is a victory for every single person who pays attention to the details every day – details that are often unnoticeable at first glance, but make a huge difference to the guest’s experience.”

The menu features well-known dishes including Ukrainian borshch served with salo and pampushkas, an assortment of fish roe with blinis and artisanal butter, herring over grilled potatoes, Jewish-style forshmak, cabbage rolls filled with shredded lamb sharpana, and eel varenyky. The venue also offers a selection of steaks and desserts, including a modern take on the classic Kyiv cake. To complement the meal, the wine list highlights renowned European vintages alongside labels from prominent Ukrainian producers.

The restaurant has earlier earned honors from the Gault&Millau gastronomic guide.
